Perfect for proofing our home made pizza dough for our new outdoor pizza oven.

At first pass, you think to yourself "why would I want something like this when some other food container would work?..." While true, you could use some other sized container that you have around your house to do a bulk ferment of dough I've found that this Cambro works so much better. Considering this is just the lid for the box.. It fits tightly but not so tightly that it's airtight. I haven't found my dough to form a skin or dry out using this lid after 12 hour fermentations like how I would in some other food storage boxes.It's big, don't be thinking you'll easily fit this into a fridge to do a slow refrigerated rise, or sticking it in your oven as an out of the way to proof your dough. That's the biggest down side of this really. But really, you kinda knew that since we're talking restaurant/commercial food grade sized product here.

Cambro in my opinion make great products, this was no exception. It does what I wanted for my pizza dough balls.Also use it to transport bread sticks and bagels to social events.
