My wife bakes a lot with sourdough and says this has really been helpful through the winter since our house stays pretty chilly at 68 degrees on warmer days. She uses this to help her starter get a little boost and also to help her bread rise when it's just cold in the house. It's really straight forward to use and the size is large enough for multiple loaf pans and her starters at the same time so she can have her starter rising for her next batch of baking while her current batch is rising as well. She didn't think she'd love it or use it but now that she has it it is a staple for her baking! She highly recommends it!

The pad comes curled up in a roll and it's kind of stiff and so it took a lot of bending, and putting some heavy pots and pans on top of it in order for it to flatten out and stay flat.Using it was very simple and it did what it promised to do. I put a bowl of sourdough on top of the pad and put the probe into the dough, set it for 86f and walked away. 3 hours later my dough rose from 66f to 86f and proofed nicely. The pad has a built in timer so you can set the bread to proof for several hours then return to room temperature in order to help prevent over proofing if you were doing this over night. This pad is great for the winter months when the temp in my kitchen is in the 60's and sourdough wants to take a day or more to bulk ferment.

I'm really pleased I found this product. It is more versatile than other similar products I've tried (I've tried MANY) because it has a much wider temperature range than most. I've never seen one before that can go up to the low 100s Fahrenheit--needed for fermenting yogurt.I put this heat mat through it's paces. I've used it for rising yeast doughs, for making yogurt, for secondary fermentation of kombucha… I mean, I use it a LOT. I have had no problems with it heating to the exact temperature I set it to. I use it inside an insulated box (the kind used for shipping food) in order to use less energy and keep the temperature the same for everything I put in there at once. If folks are having problems getting it to temperature, I suspect they're using it in a cold room or on poorly insulated surfaces. This is just a plastic mat that heats up, not an oven--you do have to use your noggin. For those saying this is a bad design, they've clearly never used a product like this before. All mats of this nature are shipped rolled up and have to be gently unfurled and if you really want it to be perfectly flat--turn it on and let the heat do the work. Also, the probe that is included (with the little suction cup) is standard for products of this type. I wet the suction cup (that helps suction cups stick, you see) and stick it to my jar, bowl, or bottle--and then I add a couple of pieces of washi tape for insurance, to keep it in place, with the probe making good contact with the vessel, throughout the fermentation process--which might be hours, days, or even weeks, in some cases.I really can't emphasize enough that I've used at least a dozen mats like this with temperature control and this is one of the very best I've used. It worked perfectly at every temp I tried and held the temp well. The controller is extremely easy to set--the instruction manual is very brief and explains how to use it adequately. The rest is up to you.
